Sri Lankan cuisine sits at the intersection of South Indian, Malay, Arab and Portuguese influences brought to the island over centuries of trade, with an emphasis on tempered spices and coconut. The Cape Weligama cooking class is held at Lookout Blue — an open pavilion on the cliff edge with the Indian Ocean below — and runs through the working logic of the kitchen: which spices are tempered (mustard seeds, curry leaves, cinnamon, pandan), which are added late, how a curry is built from the roast level up. You finish with the meal you helped cook. The chef hands over a printed recipe.

Cape Weligama sits on a cliff promontory on Sri Lanka’s southern coast, high above the Indian Ocean. The cliff-edge dining experience is held at one of three lookout pavilions — Lookout Blue, Minke, or Fin — each set at the very edge of the cape with the water below and the horizon uninterrupted. A five-course degustation menu is prepared by the kitchen and served slowly from 6:30 PM, the meal moving with the light. The lookouts are reserved one couple at a time. Weather can change the seating but rarely cancels the dinner.

Weligama Bay is one of Sri Lanka’s main surf-school regions on the south coast — long, gentle waves on a sandy bottom, peeling consistently from October through April. Cape Weligama’s in-house surf operation, run with the Australian luxury outfit Tropicsurf, teaches in the sheltered cove directly beneath the resort: small waves, calm water, expert coaching for first-timers and improvers alike. Sessions run one to four hours with rashguards, boards and one coach per few students. Advanced surfers move with the coach along the south coast to Midigama, Mirissa and other breaks for the day.

Cycle the Koggala Paddy Fields and Plantations

The cycling route through the Koggala area runs inland from the south coast through working paddy fields at whatever stage of cultivation the season holds, village lanes too narrow for vehicles, and smallholding plantations of coconut, cinnamon and tea. The pace is gentle. You stop along the way for king coconuts at a roadside stall, and again to watch coir-rope-making at a village workshop — coir is the traditional cottage industry of the south, made from coconut husks. The ride ends at the back of Koggala Lake with cold fruit and ice cream waiting. Three hours total.

Mirissa Hills is a working cinnamon estate on the gentle hills above Mirissa, and home to the world’s only museum dedicated to Ceylon cinnamon (Cinnamomum zeylanicum) — the original cinnamon, distinct from the cheaper cassia that dominates global supply. You start at the museum for the historical context: the spice trade routes that ran through this coast for two thousand years, the Portuguese and Dutch monopolies on it, the painstaking peeling and rolling process. Then through the plantation itself, where peelers work at their craft. You end at the Peelers’ Cottage with a tasting and a small bundle to take.

Weligama’s daily market is the main supply point for the south coast — vegetables from the valleys inland, fish landed that morning at the harbour just down the road, dry goods, spices, fruit. The Cape Weligama chef takes you through it before service: you walk the stalls together, the chef explains what’s good today and why, points out fish you’ve never seen before, and selects what becomes lunch. Back at Tableau (the resort’s restaurant), the same ingredients are turned into a cooking session and a meal. Three to four hours, market start at 9:30 AM.
